@DSGL Chinese chefs do that. They ladle on a load of oil into the wok to quickly cook up the meats, then drain the oil to be re-used (like a deep fryer). Industrial method I guess.

reginadotnet MSG may cause alergic reaction to some people but most restaurant use it either using raw msg or sauces which has it in its contents like oyster sauce
